Ingredients
four lemons quartered
1 sweet vidalia onion quartered
2 tbsp Greek Seasoning Mix (see my Greek seasoning mix recipe)
2 cups of sliced sweet peppers
2 tbsp of olive oil
2 tbsp of red wine vinegar
2 tbsp of balsamic vinegar
1/2 bag of baby carrots
4 chicken thighs
2 cups of cooked pearl couscous
1 crock pot liner
Directions
place crock pot liner in
place chicken thighs down
then onions, carrots, & sweet peppers
squeeze lemon juice over veggies & chicken and then put in crock pot
Mix the rest of the ingredients in a bowl
pour over veggies & chicken
cook on high for 4 hours
once chicken is done serve over couscous
